Spaghetti with Parma Ham, Lemon and Peas . . .
This is the 'real deal' pasta, you know what I'm talking' about!
On par with excellent carbonara . . .
Ingredients:
8 slices of genuine Parma Ham chopped in 1/4 inch squares
10 0z. spaghetti
tablespoon butter
1 small onion finely chopped
4 oz. small green peas
7 oz. tub sour cream
4 tbsp cream (your choice - 10% through 35%)
1 lemon - finely grated rind
2 tbsp grated parmesan
2 tbsp chopped fresh basil to garnish
shaves of parmesan to garnish
salt and freshly ground black pepper
Method:
Melt the butter in a pan and sauté the onion gently until softened and cooked through without browning. Add the peas, stir in the sour cream, lemon rind, cream, grated parmesan. Heat gently, stirring for about three minutes. Season to taste with salt and pepper.
Drain spaghetti well, return to pot and stir in chopped ham. Add the sauce slowly, stirring gently throughout. Divide on four plates, add garnish and enjoy.
