Gorgonzola Sauce . . .


1 cup whipping cream

2 oz. crumbled Gorgonzola or blue cheese

2 tbsp. chopped chives

1/4 tsp. pepper



Gently heat cream in saucepan over low/medium heat, stirring occassionally, until reduced - 30 to 40 minutes. Remove from heat and stir in Gorgonzola, chives and pepper. Pour into gravy boat and cover to keep warm.
