This Tuscan Chicken Pasta is rich, creamy, and packed with garlic, sun-dried tomatoes, and Parmesan—perfect for a comforting meal!

 

Ingredients:

For the Chicken:

* 2 boneless, skinless chicken breasts (or thighs), sliced

* 1 tsp salt

* ½ tsp black pepper

* ½ tsp smoked paprika

* ½ tsp garlic powder

* 1 tbsp olive oil

For the Pasta & Sauce:

* 8 oz pasta (thin spaghetti,penne, fettuccine, or pici)

* 3 tbsp butter

* 3 cloves garlic, minced

* 1 small onion finely chopped 

* ½ cup sun-dried tomatoes, chopped

* 2 tablespoons tomato paste 

* 1 cup heavy cream

* ½ cup chicken broth

* ½ cup grated Parmesan cheese

* 1 tsp Italian seasoning

* ½ tsp red pepper flakes (optional, for heat)

* 1 handful fresh spinach

* ½ cup pasta water (if needed)

* Fresh basil & extra Parmesan for garnish

 

Instructions:

* Boil pasta in salted water until al dente. Reserve ½ cup of pasta water before draining.

* Season chicken with salt, pepper, smoked paprika, and garlic powder. Heat olive oil in a pan over medium-high heat and sear for 3-4 minutes per side until golden brown. Remove and set aside.

* In the same pan, melt butter and sauté garlic, onions and sun-dried tomatoes for 1-2 minutes. Pour in chicken broth, scraping up any browned bits. Add heavy cream, Parmesan, Italian seasoning, and red pepper flakes,Stir in spinach and let it wilt.

* Add the cooked pasta to the sauce. Toss to coat, adding a splash of pasta water if needed for consistency.

* Plate the pasta and add the cooked Chicken on top. 

* sprinkle some more Parmesan cheese,Serve immediately!
